The olives, grown in the dry and stony Umbrian lands, are harvested by 15 January every year and the milling operations are carried out within 24 hours of the harvest. This is to keep the freshness of the fruits unaltered and to preserve all the aromas and flavours of the freshly harvested olives. The colour of Organic Extra Virgin Olive Oil DOP Umbria Colli Martani ranges from intense green to yellow, the aroma is reminiscent of fresh fruit, and the flavour is rich in bitter and fruity notes.
